Vegan Chocolate Mousse

This ones great! Not only is it Vegan, it's also Gluten Free!
We spent ages searching for Vegan desserts for my daughter.
We ended up with just vegan yoghurts; no surprise my daughter got bored of having that all the time.
Making this chocolate mousse is really quick and easy!
Ingredients
5oz Chocolate
3/4 cup aquafaba
3 tsp caster sugar
The chocolate you use in this recipe is entirely up to you. I like to use Moo Free as it's the only vegan chocolate I can find in the supermarkets without any soya in them.
Want to experiment a bit? Why not try using mint chocolate or a different flavour?
* Melt your chocolate over a saucepan. This is much quicker and easier if you break the chocolate into pieces first. Then put them in a glass bowl over a saucepan of boiling water. Keep the water boiling by putting the stove on. Stir regularly.
* In a separate bowl, mix the aquafaba until light and fluffy. I hand mix everything. If you do the same then you want to start this before you melt the chocolate or whilst as it will take a little time. If you use a hand whisk or an electric mixer you can start this after the chocolate is melted and whilst it cools a little. Gradually add the sugar and mix until firm peaks form.
* Fold half the aquafaba into the warm chocolate. Do this gently and try not to knock the air out.
* Add the chocolate mix into the remaining aquafaba. Again being gentle.
* Transfer the mix into your chosen dishes.
* Cling film the dishes and put them in the fridge for 2 hours, or until set.
Enjoy!
Why not try putting some fruit with your mousse. Or try putting some thick cream on the top.
