Vegan Butterscotch Sauce

Butterscotch sauce is the perfect thing to drizzle over a cake or some ice cream! Everyone will love some warm sauce over their dessert!


I used this butterscotch sauce and added it to my shortbread biscuits to create the perfect butterscotch shortbread.


This sauce is super easy to make and only takes 10-15 minutes and then a few hours in the fridge to thicken.

You can use the sauce straight away but it wont be as thick.


To make this sauce you just need to put the oil, butter and sugar in a saucepan and whisk until they melt and combine.


Remove from the heat and add the vanilla, then pour into a small jar and place in the fridge to thicken.


You can heat this up and enjoy is warm over your desserts or enjoy cold.


If you would like the butterscotch to be harder into chips you can pour it, thinly into a baking tray on some baking parchment and place in the freezer for a couple of hours.


Once it has hardened you can break it into pieces, perfect to go in some biscuits or cupcakes.

Butterscotch Sauce - Makes 1 Cup


Ingredients

1 Cup Olive Oil - You can also use coconut oil.

1 Cup Butter - I use Flora but you can use any plant based butter

1 Cup Brown Sugar - Firmly Packed

1 tsp Vanilla Essence


Method


Place the oil, butter and sugar in a medium pan.


Whisk, on a medium-high heat, to combine as the ingredients melt.


Continue whisking, bring the mix almost to a full boil.


Turn the heat down and simmer, continuing whisking, until the ingredients are completely combined.


Take the mix of the heat and add the vanilla essence


Pour the mix into a jar and place into the fridge to thicken. This should take 1-2 hours.


If you want butterscotch chips; pour the sauce into a large tray, on baking parchment, thinly and place in the freezer for 2-3 hours. Once hardened break the butterscotch up to create chips perfect for putting in biscuits.
