Vegan Chocolate Chip Pumpkin Bites

This is my last pumpkin recipe until next autumn!
As some of you may know, my brother gave me a couple of extra pumpkins after halloween. Of course I had to make some recipes out of them and share them. I hadn't had much chance to make pumpkin recipes this year so I was very happy when Lawrence gave me the opportunity to make more.
I saved the best recipe until last!
This is without a doubt the best pumpkin recipe I have made, I shared these vegan chocolate chip pumpkin bites with my family and it is unanimous!
This recipe requires pumpkin puree, I have found this quite difficult to get hold of so I always make my own.
Pumpkin puree;
Peel and chop your pumpkin, place in a small saucepan.
Boil, in water, for roughly 20 minutes or until soft enough to mash.
Drain the water from the pumpkins.
Mash the pumpkins.
It's that simple!
I imagine it's cheaper to make your own as well, you can buy a small pumpkin for £1 which will make enough puree for at least 2 recipes. 1 can you buy from the shop is likely to be at least £1 for 1 recipes worth of puree.
This recipe makes 20 pumpkin bites, and it's so easy to follow!
It's perfect for a snack for the kids, or to impress at a gathering.

Ingredients
1 tbsp Chia Seeds
3 tbsp Water
2 ¼ Cups Plain Flour
1 tsp Ground Cinnamon
1 tsp Ground Nutmeg
1 tsp Ground Ground Ginger
1 tsp Bicarbonate of soda
115g Butter - I use Pure but any plant based butter will work
150g Caster Sugar
110g Light Brown Sugar
1 ½ tsp Vanilla Essence
1 Cup Pumpkin Puree - Please read above to find out how to make pumpkin puree
2 tbsp Milk - I use Oat milk but any plant based milk will work
1 ½ Chocolate Chunks
Method
* Preheat the oven 180C
* Line 2 loaf tins.
* Mix together the chia seeds and water to create a flax egg.
* In a large mixing bowl cream the butter and the sugars.
* Add the puree, vanilla and flax egg. Mix until smooth. If this doesn't go completely smooth don't panic! It will sort itself out when you add the flour.
* Sift in the flour, spices and bicarbonate of soda. Mix together.
* Stir in the milk and 1 cup of chocolate chips. You need to leave 1/2 cup of chocolate chunks for the top.
* Pour the batter equally into both your prepared tins.
* Sprinkle the left over chocolate chunks over the top of the mix. Press them down slightly.
* Bake for 30 minutes.
* Once cooled completely cut into small pieces.
