Vegan Flatbread Cheese Melts

These flatbread cheese melts are a great easy dinner or lunch. This recipe makes 4 flatbread cheese melts.
These flatbreads go great with a dip like salsa, hummus or ketchup. They are great for a cheesy lunch or paired with salad for a healthy summer’s dinner.

The filling ingredients are up to you. Onion is always good with melted cheese, we also love olives and had red pepper that needed using, this is why I used the combination I did. This would also be good with a fried veg mix for the filling.
If salad and vegetables aren't your thing, you can make these into a pizza style flatbread, with a tomato sauce filling. Try sprinkling some cheese on top to add some extra flavour.
Nothing is better than melted cheese but on a hot summers day it can be too much, you could try filling these with some salad and grated cheese, don't melt them and enjoy them cold.
The great thing about this recipe is that there are so many filling options to choose from. You can adapt it completely for your tastes and meals.
You can buy wraps from the shop, if you want this to be even quicker, and use those.
You can also make these flatbreads in advance so they are ready for you.

Flatebread Cheese Melts - Makes 4
Ingredients
Flatbread:
200g Plain Flour
100ml Warm Water
2 tbsp Oil + more for frying
Filling:
½ Grated Vegan Cheese
1 Red Pepper, Sliced thinly
2-3 Spring Onions, Sliced
6-8 Olives, Sliced
Method
Sift flour into a mixing bowl.
Add the water a little at a time.
Add the water and knead for around 5 minutes.
Cut dough evenly into 4 pieces.
Roll each piece thinly as circular as you can.
Heat a frying pan on low/medium heat.
Fry each flat bread for around 1-2 minutes each side.
Preheat your grill to 180c.
Spread your filling ingredients onto one side of each flat bread.
Fold the empty side of the flatbread onto the side with the filling.
Grill for around 5 minutes.
Serve
