Do you love lemon cake? Are you looking for a way to spice up the lemon cake?
This Vegan Lemo Loaf is perfect! It tastes as good as a lemon cake but has a little more of a bread texture.
It's a similar texture to banana bread.
I think this tastes amazing and it's a perfect picnic cake!
With the sun starting to shine more and more, it's almost time to start thinking about what to pack in your picnic!

I of course had some friends and family try the cake, and my daughter, everyone really enjoyed it! Maxine asked for more, she ate more of this than she did her lunch and my husband finished what was left the same evening I made it.
This is the perfect recipe to start of the summer with! It's light, full of flavour and so tasty!
You can't go wrong with this recipe!
I made this one as I was trying out a couple of lemon cake recipes for my mums birthday. She asked me to make her a lemon cake for her birthday next week so I had to make sure I was giving her the best cake I could.
Both the cakes I tried were so tasty and so hard to choose from, the other recipe I tried will be up soon! As I've already said, this recipe is more of a loaf than a cake, which is the only reason I could choose which cake to use for my mums birthday!

Lemon Loaf
Ingredients
2 Cups Plain Flour
1 tsp Baking Powder
1 tsp Bicarbonate of Soda
½ Cup caster Sugar - I use Golden caster sugar but that's out of preference
Zest from 1 Lemon
½ Cup Olive Oil
1 ½ tbsp Water
1 Cup Plain Yoghurt - I used Koko Vegan Yoghurt but any pantbased yoghurt will work
1 tsp Vanilla Essence
Juice from 1 Lemon
½ Cup Butter - Melted - I use Pure but any plant based butter will work
Icing;
1 Cup Icing Sugar
Juice from 1 Lemon
Water if needed - This is to use if the icing is too thick
Method
* Preheat the oven 160C. Grease and line a loaf tin. I used a slightly bigger loaf tin than an average one, but using an average one would work and would make it have a bit more volume.
* In a large bowl sift the flour, baking powder and bicarbonate of soda.
* Add the lemon zest and sugar.
* Add the water, oil, yoghurt, lemon juice, vanilla and melted butter. Mix until smooth.
* Pour the mix into your prepared tin.
* Bake for 40-45 minutes or until toothpick comes out clean.
* Let cool completely before adding the glaze.
Icing;
* In a small bowl sift the icing sugar.
* Mix in the lemon juice.
* If the mix is a little too stiff you can add a little water.
* Mix until completely smooth and the consistency you want.
* Once the cake is completely cooled, gently spread the icing over your loaf.
* Place in an airtight container until ready to serve
Serve
